2. What is whole food plant-based nutrition?
A way of eating that includes unlimited amounts of fruits, vegetables, whole grains, and legumes. It excludes meat, dairy products, eggs, but goes beyond a vegan or vegetarian approach by minimizing processed foods as much as possible. Some examples of processed foods include oils, white bread, and those with artificial ingredients. In contrast to a short-term "diet," whole food plant-based nutrition is a sustainable approach that can be maintained for a lifetime as there is no need to count calories or limit portions. It is the position of the Academy of Nutrition and Dietetics that this approach is "healthful, nutritionally adequate and may provide health benefits for the prevention and treatment of certain diseases" and "appropriate for all stages of the life cycle." The American Association of Clinical Endocrinologists and American College of Endocrinology guidelines for individuals with type 2 diabetes recommend "all patients should strive to attain and maintain an optimal weight through a primarily plant-based meal plan."
Whole food plant-based nutrition "eliminates the need to worry about the details. Just eat lots of different plant foods; your body will do the math for you!" --T. Colin Campbell
